Ten Super Simple Dressings & Marinades

Use these dressings & vinaigrettes on your favorite veggies, salads & even as marinades for chicken and fish. NOTE: Each recipe makes approximately 1/2 C. of vinaigrette or dressing. If you have leftovers, store in the fridge for about a week or so. Expect the oil to thicken up a bit, but that’s no big woop. Let stand at room temp a few mins, shake & you’re good to go.

Main Ingredients

1 - italian vinaigrette (this is a great marinade for chicken as well)

1/3 c. olive oil

1/4 c. red wine vinegar

1 ⁄2 t. italian seasoning

1 clove minced, fresh garlic

1/4 t. crushed red pepper flakes

1/4 t. each- salt, black pepper

*substitute the red wine vinegar with balsamic for a balsamic vinaigrette. why not?

2 - lemon-pepper vinaigrette (love this light dressing on fish, both as a marinade and a light sauce! )

1/3 c. sunflower oil (or other light oil)

1/4 c. white wine vinegar

juice of one whole lemon

1 t. lemon pepper seasoning

1/4 t. each- salt, black pepper

3 - mustard vinaigrette (soooo good on a spinach salad)

1/3 c. olive oil

1/4 c. red wine vinegar

1 t. fresh lemon juice

1 t. dijon mustard

1/2 t. garlic powder

1/4 t. each- salt, black pepper

4 - creamy garlic dressing

(delicious over romaine lettuce, or even drizzled on baked potatoes and asparagus. try roasting the garlic cloves instead)

1/3 c. olive oil

1/4 c. red wine vinegar

6 t. mayonnaise or sour cream (i’ll leave it up to you as to whether you use full fat or low fat varieties)

2 cloves finely minced garlic

1/4 t. each- salt, black pepper

5 - creamy parmesan peppercorn dressing (works great as a dip, too! )

1/3 c. olive oil

1/4 c. white wine vinegar

6 t. mayonnaise or sour cream

1 t. parmesan cheese, grated

1/4 t. salt

1 t. coarsely ground black pepper (i like tri-colored peppercorns)

6 - honey mustard dressing (this is also my chicken finger dipping sauce! )

1 t. mustard

1 t. honey

1 t. white vinegar

1/4 c. mayonnaise

1/4 c. sour cream

7 - greek dressing (i pour this straight over a chopped greek salad)

1/3 c. olive oil

1/4 c. red wine vinegar

1 t. fresh lemon juice

1 clove of fresh, minced garlic

1 t. oregano

1/4 t. each- salt, black pepper

8 - lime dressing (perfect accompaniment for fish tacos too)

1/3 c. olive oil

1/4 c. fresh lime juice

1/2 t. garlic powder

1/4 t. ground cumin

1/4 t. each- salt, black pepper

9 - creamy blue cheese dressing (this goes straight over a wedge of iceberg lettuce and some crumbled bacon)

3 ounces blue cheese, finely crumbled

5 t. cream

5 t. sour cream

3 t. mayonnaise

1 t. white wine vinegar

1/8 t. garlic powder

1/4 t. each- salt, black pepper

10 - asian vinaigrette (i can’t take full credit for this one- it is adapted from epicurious. com)

1/2 garlic clove, finely grated

1 t. soy sauce

2 t. rice vinegar

1/2 c. olive oil

1/2 t. toasted sesame oil

1/4 t. each- salt, black pepper

1 t. sesame seeds

Preparation

1Pour all measured ingredients into a sealed container & shake vigorously.

2Begin with the “wet” ingredients, then add the others.

3Let stand at room temperature 5-10 minutes to incorporate flavors.

4Shake again & use as desired.
