Tahini Roasted Cauliflower

1 head of organic cauliflower
2 tbsp liquid or melted grass-fed ghee (or coconut oil)
2 tbsp tahini
sea salt & pepper to taste
1Wash & cut cauliflower into florets, about 1-2 inches in size and place in a large bowl.
2Preheat oven to 425.
3Drizzle liquid or melted ghee and tahini over cauliflower, using tongs to toss until it is all evenly coated.
4Sprinkle with salt and pepper, tossing to coat again.
5Line a baking sheet with parchment paper and spread cauliflower evenly on baking sheet.
6Roast at 425 for 25-30 minutes, flipping half way through (around 10-12 minutes) so that is charred but not burned on both sides.
