Tahini Apricot Waffles

In a large glass bowl, add dry ingredients (arrowroot, coconut flour, baking soda, baking powder, salt, and cinnamon). Whisk to combine. Set aside. Main Ingredients

1/2 cup arrowroot powder

1/2 cup coconut flour

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp himalayan sea salt

1 cup nut milk (i used brazil nut milk here)

3 eggs 2 tbsp grape seed (or other neutral) oil

1/2 cup tahini

1/2 tsp ground cinnamon

1/4 tsp vanilla extract

6 dried apricots, diced into small pieces

Preparation

1In a large glass bowl, add dry ingredients (arrowroot, coconut flour, baking soda, baking powder, salt, and cinnamon). Whisk to combine. Set aside.

2In a smaller bowl, add wet ingredients (eggs, nut milk, grape seed oil, vanilla extract, and tahini). Stir to combine.

3Add wet ingredients to dry ingredients. Whisk to combine. Gently fold in chopped apricots. Set aside & allow batter to rest for 10 minutes.

4Preheat waffle iron, greasing with extra coconut oil if necessary.

5Once iron is warm, add batter and allow to cook per your waffle maker's instructions. I used a heaping 1/3 cup measuring cup to pour batter into my waffle iron.

6Remove waffles from iron once they've finished cooking. Place them on a wire rack and allow them to cool a bit. When ready, serve as desired. Enjoy!
