Roasted Garlic Quinoa Tabbouleh

Main Ingredients

1 cup of white quinoa, rinsed and cooked, then cooled in fridge or to room temp.

1 cucumber, peeled and chopped into small 1/4 inch cubes

7 - 10 cherry tomatoes, sliced in half, seeds removed if desired

1/2 a bell pepper, finely diced

2 green onions, sliced

1/2 cup parsley or more if desired, finely chopped

1 - 2 tablespoons fresh mint leaves, finely chopped

Dressing

1/4 cup lemon juice

1/4 cup water

2 tbsp tahini or cashew butter

1 tbsp coconut aminos or tamari

4 large cloves of garlic, roasted until soft*

1 tsp maple syrup or coconut sugar, optional

Preparation

1In a large bowl or large glass tupperware dish, mix together the cooked quinoa and chopped veggies and herbs.

2Make the dressing by combining all of the dressing ingredients in a blender or food processor. For a blender-free version, use the quick recipe listed in the notes at the end of this recipe.

3Add the dressing into the bowl with the cooked quinoa and toss until everything is evenly coated. Cover the bowl or tupperware dish and place in the fridge to marinate for at least a couple of hours before serving. Add in the tofu feta if using and serve cold with an extra squeeze of lemon juice and an extra pinch of salt if desired.

Additional Notes

For a quick dressing option and no blender required, just use 1/4 cup lemon juice with a pinch of salt and 1/4 tsp garlic powder. To roast garlic, wrap the cloves in aluminum foil and bake at 400 degrees for 10-15 minutes until cloves are soft and squishy. Then peel and add to the dressing.
