Sweet Potato Pancakes
These pancakes are sweet, savoury and spicy all at the same time! But don't let "Pancake" fool you! These patties are great anytime of day! They make a great burger, portable snack, on salads and in wraps!
Sweet Potatoes are high in beta-carotene, which helps maintain healthy skin and eyes!

1 tbsp coconut oil
2 cups sweet potatoes, grated (leave the skin on if organic)
1/4 cup purple onion, finely diced
1/4 cup hemp hearts
2 garlic cloves, minced
1 tsp cumin
salt & pepper
1Mince the garlic and set aside.
2In a large mixing bowl, combine sweet potatoes, onions, garlic, cumin, salt & pepper. In a small bowl, whisk the eggs. Pour the egg mixture into the large bowl and coat the ingredients.
3Over medium heat in a large skillet, melt the coconut oil to coat the bottom of the pan. Using a 1/2 cup, scoop the sweet potato mixture and form round, flat “pancakes” in the pan (fit about 3 in a pan each time). Cook until golden, about 3-5 minutes per side.
4To serve, top pancakes with Greek Yogurt.
5Refrigerate leftover pancakes and simply “toast” for breakfast the next day!
