Sweet Potato Nachos

Preheat oven to 400F With a mandoline slice 2 pealed sweet potatoes 1/8 inch thick. Add to a bowl with olive oil, salt and pepper. Toss until evenly coated. Line a baking dish with sweet potatoes. Bake for 15 min, flip, then bake for 10 minutes. If you would like them a little crispier broil for 3-5 min watching closely. You may have to do this in 2 batches. Main Ingredients

2 sweet potatoes

1 - 1.25 lbs ground turkey

1 can black beans, drained & rinsed

1 can green chiles

1 tsp onion powder

1 tsp garlic powder

1/2 tsp cumin

1/2 tsp chili powder

olive oil

s&p

toppings: cilantro, roma tomatoes, purple onion, cheese, guac

Preparation

1Preheat oven to 400F

2With a mandoline slice 2 pealed sweet potatoes 1/8 inch thick. Add to a bowl with olive oil, salt and pepper. Toss until evenly coated.

3Line a baking dish with sweet potatoes. Bake for 15 min, flip, then bake for 10 minutes. If you would like them a little crispier broil for 3-5 min watching closely. You may have to do this in 2 batches.

4While sweet potatoes are cooking, brown ground turkey. Once turkey is cooked add onion powder, garlic powder, cumin, chili powder, green chiles, and 1/2 cup water. Mix together and let simmer until water dissolves.

5Once water dissolves add black beans and stir together.

6Combine all sweet potato chips and top with half of your meat/bean mixture. Add toppings! I used 3 roma tomatoes, 1/4 purple onion, and a handful of cheese.

7Bake until cheese is melted then add more toppings! I recommend cilantro & guac.
