Sweet Potato Nacho Cheeze Sauce
Steam the chopped vegetables for 20-25 minutes until soft. Place steamed veggies in blender and combine with the remaining ingredients. Serve over pasta, nachos, baked potatoes, or as a dip. Stores in the fridge for up to one week, or even longer in the freezer.

3 cups sweet potato, peeled and chopped
2 medium carrots, peeled and chopped
1/2 tablespoon miso paste
1/2 cup nutritional yeast
1/2 - 1 teaspoon smoked paprika
1 tablespoon onion powder or dried onions
1 teaspoon garlic powder
2 tablespoons lemon juice
1 1/2 cups plant milk or water (use plant milk for added creaminess)
1/2 teaspoon salt or salt to taste
