Main Ingredients

4 sweet potatoes cut into fries (approx. 1/4 inch cubed)

2 tbsp 4th and heart vanilla bean ghee

2 - 3 tsp cinnamon


1Preheat oven to 425 degrees.

2Cut sweet potatoes into 1/4 inch size around and 2-3 inch long.

3Soak in room temperature water for at least 10-15 minutes (longer if possible). Dry on paper towel prior to placing on baking sheet.

4Spread out on baking sheet and top with tablespoons of ghee (no need to melt it prior to putting them in the over, you can wait for the heat of the oven to melt it and then stir).

5Sprinkle cinnamon over top of sweet potatoes and mix thoroughly after allowing ghee to melt for approx. 5-10 min in oven.

6Bake for 40-50 minutes while stirring continuously every 10 minutes (may need to bake longer or for less time depending on thickness of fries.)
