Main Ingredients

1 large sweet potato

2 tsp avocado oil

2 cups spinach

2 cups kale

1/2 cup unsweetened almond milk

2 whole eggs

5 egg whites

1/4 tsp black pepper

1/4 tsp salt

1/4 tsp garlic powder

1/4 tsp crushed red pepper

1 cup mozzarella or feta cheese

Preparation

1Preheat oven to 350 F

2Grease pie pan with avocado oil

3Thinly slice sweet potato and evenly lay on bottom of pie pan, covering the bottom & sides

4Brush a little more olive oil on top of sweet potatoes, bake for 20 minutes, then take out of oven

5Saute spinach and kale in a pan for 3-4 minutes to cook it down, then place on top of sweet potato crust

6Mix together the milk, eggs, and seasonings then pour mixture into pie pan on top of the spinach & kale

7Top with cheese of choice

8Bake for 35-40 minutes

9Slice and Enjoy!
