1 large sweet potato
2 tsp avocado oil
2 cups spinach
2 cups kale
1/2 cup unsweetened almond milk
2 whole eggs
5 egg whites
1/4 tsp black pepper
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp crushed red pepper
1 cup mozzarella or feta cheese

7Top with cheese of choice
