Sweet Potato Chili With Turkey

1 pound ground turkey
1 medium onion
2 sweet potatoes
1 red bell pepper
1/2 cup shredded carrots
3 cloves minced garlic
2 chipotle peppers in adobo sauce (optional)
2 tbsp chili powder
1 tsp paprika
1 tsp onion powder
1/2 tsp cayenne pepper
1 can tomato sauce (14.5 ounce)
1 can diced tomatoes (14.5 ounce)
15 ounce chicken stock
salt and pepper to taste
1Peel and chop your sweet potato, peel and shred carrot, chop your bell pepper, peel and chop onion, mince garlic and chipotle pepper.
2In a large stock pot brown the ground turkey, add in your onions, garlic, red pepper and carrots. Once onions become translucent add in chipotle pepper, chili powder, onion powder, paprika, cayenne pepper. Stir around and let the seasonings toast a little.
3Next add in the wet ingredients, tomato sauce, diced tomatoes, chicken stock. Season with salt and pepper to your liking. Add in the chopped sweet potatoes and turn heat down to a low simmer.
4Let simmer for 20-25 minutes until the sweet potatoes are tender. Check seasonings and adjust to your liking.
5Plate in bowls and garnish with sour cream.
