Sweet Potato And Onion Soup

2 tbsp earth balance vegan butter
1 Clove garlic, minced
3 Large onions, sliced into thin rings
1 Large carrot, chopped
1 medium sweet potatoes or yams, peeled and chopped into inch cubes
6 cups vegetable broth
2 tbsp maple syrup
1/2 tsp cinnamon
raisins and pepita seeds for topping (optional)
1/2 tsp salt
1/4 tsp black pepper
1In a large pan, sauté the onions, carrots, and garlic in butter for 5-7 minutes.
2Meanwhile, heat the vegetable broth in a large pot over medium heat. Bring to a low boil. Add the sautéd onion mixture, sweet potatoes, and remaining ingredients.
3Cover pot and simmer over medium-low heat for 20-30 minutes or until sweet potatoes are fork-tender.
4Remove from heat and let cool for a couple minutes. Transfer to a blender and purée until smooth.
5Transfer puréed soup back to the pot and reheat if needed. Top with pepita seeds and raisins, or serve with crackers or a sliced whole wheat bread loaf.
