Main Ingredients

2 cups rolled oats

1/2 cup ground flaxseeds

1 cup shredded unsweetened coconut

1/4 cup raw pumpkin seeds

1/4 cup raw sunflower seeds

1/4 cup raisins

1 tsp cinnamon

1/2 tsp sea salt

1 tsp vanilla extract

2/3 cup honey or maple syrup

3/4 cup nut butter of choice ( i used organic peanut butter)

Cacao Topping (optional)

2 tbsp raw cacao powder

1/2 cup coconut oil

1/2 tsp sea salt

Preparation

1Mix together all the dry ingredients in a mixing bowl

2Mix the nut butter, honey/maple syrup and vanilla together in a separate bowl until well combined

3Add the dry mixture to the wet and mix to combine fully. It should be a sticky consistency and should not feel or look dry

4Pour the mixture into a parchment lined baking dish. Press the mixture down firmly with a spoon to make sure it all sticks together then place in the freezer to set

5While the bars are setting, make the Cacao topping if you wish. Melt the coconut oil in a small saucepan and add the cacao and salt. Stir until it resembles melted chocolate and drizzle over the bars

6Simply slice the bars into your desired length and shape and enjoy!

Additional Notes

Store in the freezer or fridge
