Super Simple Raw Cabbage Slaw

This Raw Cabbage Slaw is loaded with antioxidants and essential vitamins and minerals. Its a bowl of Super Foods and a great dish to keep in your fridge when you feel like a crunchy snack. Im on a mission to get more plant based raw food into my diet. This was a great starting point for me and I just keep making it!

Main Ingredients

1 small head red cabbage

1 small head green cabbage

1/4 cup chopped parsley

1 cup toasted pepitas ( pumkin seeds) or slivered almonds

1 bag of shredded carrots

1/4 cup olive oil

1/2 lemon juice

1/2 tsp kosher salt

1/2 tsp cumin

1/4 teaspoon black pepper

1 teaspoon coconut sugar


1Chop your Cabbage to desired size, it really just falls into shreds as you cut

2I used a pre shredded bag of organic carrots but you can absolutely shred your own

3Roughy Chop your Parsley

4Toast your seeds or almond slivers in a pan on medium heat for about a minute until you hear popping noise

5For the Dressing:

6In a small bowl combine olive oil, lemon, and seasonings

7Pour over slaw and toss.

8Keep in airtight container in fridge for 4 days
