Super Simple Quinoa Salad
Make a nutritious quinoa salad in no time! Perfect for those avoiding gluten and processed foods.

1 cup quinoa
2 cups water or vegetable stock
1/2 red onion, chopped
2 - 3 cups additional raw vegetables, chopped (carrots, mushrooms, cucumber, celery, grape tomatoes, etc.)
1/2 cup steamed peas
handful of cilantro, chopped
1Using a fine mesh grain strainer, rinse quinoa with water until it runs clear. Then place quinoa and stock (or water) in a saucepan.
2Bring to a boil and then reduce heat to a simmer, cover with lid and allow to cook for 15 minutes.
3Remove from heat and let stand 5 minutes, covered. Fluff with fork.
4Combine cooked quinoa with red onion, raw veggies, steamed peas and cilantro. Salt and pepper to your liking then squeeze 1/2 lemon over the entire mixture, being careful to catch all the seeds. Drizzle with a few tablespoons of olive oil and then mix.
