Super Food Kale & Shrimp Quiche
I was looking for a healthy and super-easy-convenient meal to make, store, grab and go. I felt a quiche would encompass all these, plus taste great. I SO love it when I’m right!

9 inch pie crust shell
8 large eggs
1/4 cup almond milk (regular milk will suffice)
1/2 tsp nutmeg
1 cup white cheddar cheese, shredded
1/2 cup swiss cheese, shredded
1 cup medium shrimp, halved
3 cups kale, washed & chopped
1/2 cup onion, chopped
1 tbsp grapeseed oil
2 tsp minced garlic
1/2 tsp salt & pepper each
1Preheat oven to 350.
2Layer bottom of pie crust with both cheeses, set aside.
3In a sauce pan on med/high heat, add oil and mix together shrimp, kale, onions, and garlic, seasoning with salt and pepper to your taste, until shrimp is an opaque and pale pink- remove immediately from heat.
4Add shrimp and kale mixture to cheese covered pie shell.
5Mix eggs, milk, and nutmeg and pour on pie shell mixture coating evenly as possible.
6Place pie on the middle rack in the center of the oven and let bake for approximately 35 minutes, or until the middle is firm.
