Summer Salad Dressing

I can't begin to tell you how I long for summer during this time of year. And this dressing recipe, by far, will put me in the mood for summer. You can pretty much put it on any salad of your choice but the oh so fresh and clean greek garden salad is generally what I shoot for with this one. It has a red wine vinegar base which gives it that light, crisp summer feel.

Main Ingredients

1/2 cup olive oil

3 tablespoons red wine vinegar

2 teaspoons dijon mustard

1 tablespoon shallot (minced)

1 garlic clove (minced)

salt & pepper to taste

option: add a pinch of red pepper flakes for heat


1​In a small bowl or blender, whisk/mix together vinegar, mustard, garlic, shallot and olive oil.

2Season with salt and pepper to taste.

Additional Notes

Tip: using a blender will help emulsify the oil and vinegar, avoiding the dreaded separation while preparing your salad! It will also mince the garlic and shallot, making your prep that much easier.
