Sugar-free Mixed-berry Jam Recipe (keto, Gluten-free, Gelatin-free, Vegan)
One of the foods I miss most when sticking to a low-sugar diet is jam; it just works so well with many of my favourite foods! Made with only 4 ingredients, this jam is super easy to make, and although it's also 100% healthy, it doesn't compromise on that sweet-but-slightly- tart flavour we're used to!

3 - 4 cups of organic frozen mixed berries
2/3 cup water
1/2 package of pectin
2 drops of sweetleaf vanilla creme stevia (or to taste)
pinch of salt
1Add all ingredients to a heavy-bottomed pot, and stir to completely combined.
2Place on stove hob, and bring heat to medium-high.
3Bring just to a boil, stirring occasionally, and reduce heat to just under medium.
4Continue to cook, stirring gently every 10 - 15 minutes, until thick (about 40 minutes).
5Remove from heat, cool, and store in a glass container. The jam will last for about a week in the fridge.
Note: I like to use a mixed berry blend, but this jam will equally as good with any berry.
