Strawberry Feta Spinach Salad

SALAD: Wash spinach and put in serving dish Chop the tomato, red onion, strawberries, water chestnuts and put over salad Pour 2 Tbsp dressing over salad Sprinkle with the feta cheese and serve Add any source of protein: chicken breast, ahi tuna, salmon, etc. DRESSING: Combine all ingredients in a bowl or bullet Whisk or blend on low speed until all ingredients are combined

Main Ingredients

salad:

2 cups spinach

1/2 cup chopped fresh tomatoes

1 slice diced red onion (optional)

1/2 cup sliced strawberries

1/8 cup sliced water chestnuts

1 oz crumbled feta cheese

dressing:

2 tbsp per serving size

1/4 cup olive oil

1/8 cup rice vinegar

2 tbsp. sesame oil

1 tbsp. lemon juice

1 tbsp. soy sauce-low sodium

1 tsp. sesame seeds

1 tbsp. dijon mustard

1 packet stevia (if desired)

Preparation

1SALAD: Wash spinach and put in serving dish

2Chop the tomato, red onion, strawberries, water chestnuts and put over salad

3Pour 2 Tbsp dressing over salad

4Sprinkle with the feta cheese and serve
