Tofu:

2 tablespoons starch (corn, tapioca, potato, arrowroot, will all work)

1 block of extra firm tofu, drained and pressed, chopped into cubes

Sticky Sweet & Sour Sauce:

1 tbsp starch mixed with 2 tbsp water

3 garlic cloves, minced

2 tsp fresh grated ginger

1/2 tsp chili pepper flakes

1/3 cup rice vinegar

1/2 cup water

1/2 cup maple syrup

2 tbsp tomato paste

2 tbsp low-sodium tamari or soy sauce

Garnish:

1 teaspoon black or white sesame seeds

1 - 2 green onions, chopped

Preparation

1Preheat oven to 425 degrees fahrenheit.

2Toss the cubed tofu with 2 tablespoons of starch and spread on a parchment or silpat lined baking tray. Bake for 20 minutes then remove from the oven and set aside.

3Stir together the starch and water in a small bowl.

4In a frying pan over medium heat, add the ginger and garlic and cook for 2 minutes until fragrant. Then add in the chili flakes, rice vinegar, water, maple syrup, tomato paste, and tamari.

5Once the mixture starts to boil, whisk in the starch and water mixture. Continue to stir and let the mixture simmer over medium-low heat for 10-12 minutes as the mixture thickens and becomes very sticky, then turn off the heat.

6Add the crispy baked tofu cubes into the pan with the sticky sauce and toss until they are evenly coated.

7Serve over rice and then top with chopped green onions and a sprinkle of sesame seeds.

Additional Notes
