St Patrick's Day Mints
Use your cookie press to make shamrock shaped mints!

8 oz. cream cheese, softened
3 t. butter, softened
1 tsp. peppermint extract
8 - 9 c. powdered sugar
green food coloring
round white decorating candy pearls
1In the mixer, beat the cream cheese and butter until smooth.
2Add the extract and then add the powdered sugar, 2 cups at a time until you have a stiff dough. Add the green coloring. Put the dough in the refrigerator for 2 hours to chill.
3Line a few baking sheets with waxed paper. Use the shamrock shape on the cookie press and load the press with the dough. Click it our one click at a time and lift straight up off of the parchment paper to form a little mint shamrock! Place a white pearl in the middle of each one.
4All the mints to dry for about 3 hours. Store them in the refrigerator or freezer.
