Pesto

2 cups fresh arugula, packed

1 clove garlic, smashed

1 tbsp walnuts, toasted and roughly chopped

1/4 cup parmesan cheese, grated

1/4 - 1/2 olive oil, about cup

salt and freshly ground black pepper

Pasta

4 oz fettuccine, fresh or store bought

6 - 8 spears of asparagus, sliced into inch and a half long pieces, woody ends removed

1 handful of fresh parsley, chopped

chopped walnuts for serving

shaved parmesan for serving

Preparation

1For the pesto, place the arugula, garlic, walnuts, parmesan cheese, a pinch of salt and a few turns of black pepper into a food processor. Turn on low speed.

2While processing, drizzle in about 1/4 cup of olive oil into the feeder tube of the food processor. Process and, if necessary, continue adding oil until desired consistency is reached (chunky and a little oily).

3Meanwhile, bring a large pan of water to a boil.

4While waiting for water to boil, toss asparagus in a glug of oil and season with salt and pepper. In a sauté pan over medium-high heat, sauté asparagus pieces. Five minutes ought to do it - you still want them to have a bit of a crunch (at least I do).

5Salt the pasta water and cook the pasta according to package instructions (or until al dente. 7ish minutes for store bought, 3-4 minutes for fresh).

6Reserve about 1 cup of pasta water. Drain pasta. Return pasta to pot (off of the heat).

7Add about 1/2 cup of the pesto to the pot, along with the asparagus and parsley. Toss, occasionally adding in tiny amounts of the reserved pasta water until the sauce starts to come together and coat the pasta.

8Transfer to serving plates, top with shaved parmesan and chopped walnuts.
