Spinach Swiss Egg Cups

2 cups spinach
6 extra large eggs
5 Egg whites - this is about 3/4 cups of liquid egg whites
1/3 cup almond milk
2 the laughing cow swiss cheese wedges
s&p to taste
garlic powder (optional)
1Preheat oven to 350 degrees and line a muffin tin with foil cupcake liners or spray with coconut oil. Sauté spinach with some olive oil. Whisk together eggs, egg whites, and milk. Mash cheese and add to egg mixture. Add spinach to mixture. Continue whisking until cheese is mixed through. Pour batter into each cupcake liner OR sprayed cupcake tins. Bake for 15 minutes or until eggs are cooked through.
Refrigerate or freeze for easy go to breakfasts, snacks, etc!
