3 tbspsbalsamic vinegar
2 tbspsextra virgin olive oil
1 tbspdijon mustard
1 tbspmaple syrup
1 garlic (clove, minced)
6 cups baby spinach
1 cucumber (large, diced)
1 can hearts of palm, diced
1/2 cup feta cheese (crumbled)
2 tbsp dried cranberries
1 tbsp sunflower seeds
1Combine balsamic vinegar, olive oil, dijon mustard, maple syrup and minced garlic in a jar. Season with a pinch of sea salt and black pepper. Seal with a lid, shake vigorously and set aside.
2In a large salad bowl combine spinach, cucumber, feta cheese, dried cranberries and sunflower seeds. Add the desired amount of dressing and toss well to combine.
3Divide into bowls and enjoy!
Storage-Stores well in the fridge up to 3 days.
