Main Ingredients

1 cup shelled pistachios

1/3 cup walnuts

3 cups fresh baby spinach

1 cup fresh basil

1 tablespoon lemon juice

2 cloves of garlic

salt to taste (optional)


1Combine all ingredients in a food processor. Process until creamy. It may take 5+ minutes. Add water to thin as needed. Taste and adjust garlic and salt as needed. Depending on how salty the pistachios are- I rarely need to add salt!

2This freezes well. I typically freeze in small portions so I can top pasta or add to an hors d'oeuvres board at the last minute!
