Spinach And Feta Stuffed Atlantic Salmon

Main Ingredients

2 lbs fresh atlantic salmon fillets

2 cups feta cheese

1 cup fresh spinach

2 tbsp honey

2 tbsp dijon mustard

Preparation

1Set the oven to broil and allow to preheat.

2Divide the Salmon fillets into approximately 5 oz portions. Cut a slit in the middle of each portion, leaving about 1/2 inch on each side. Make sure to not cut too deep so as to pierce the skin on the other side. Season each portion with salt and pepper.

3Line the slit in each portion with spinach. Fill in the slit with the feta cheese. Some filling may fall out of the slit and onto the salmon which is fine.

4In a small bowl, combine the honey and dijon mustard and blend together with a fork. Place the Salmon fillets on a broiler safe tray. Drizzle the honey dijon glaze on the salmon and spread evenly with a spoon or basting brush.

5Place the tray into the broiler and cook for 8-10 minutes. Keep an eye on the broiler to make sure the glaze does not burn.

6Carefully remove the tray from the broiler. Remove the salmon with a spatula and serve with your favorite sides.
