Main Ingredients

mozz-stuffed meatballs:

1/4 cup unsweetened, original cashew or almond milk (i prefer cashew)

1 tbsp coconut flour

1 lb lean ground beef (ninety %)

1 egg, whisked

1/4 cup grated parmesan cheese

1/2 tbsp worcestershire sauce

1 tsp italian seasoning

1/2 tsp oregano

1/2 tsp crushed red pepper

1/2 tsp garlic powder

1/2 tsp salt

4 light string cheese, each cut into six pieces

for sauce:

2 cups canned, diced fire-roasted tomatoes, pureed in a blender or food processor

1/4 tsp salt

for zucchetti:

4 medium-sized zucchini, ends removed

cooking spray (i use olive-oil based or coconut-oil based)

Preparation

1In a medium-sized bowl, combine milk and coconut flour. Add remaining meatball ingredients, except for string cheese, and mix with your hands until well combined. Press one tablespoon of meat mixture around one piece of string cheese, and form into a small meatball (cheese should be completely covered). Repeat with remaining meat mixture and string cheese pieces (you should make about 24 small meatballs).

2Layer meatballs in a lightly-greased slow cooker. Mix salt into pureed tomatoes. Pour pureed tomatoes on top of the meatballs to cover them. Cook on high for 2.5 to 3 hours, until meatballs are cooked through.

3When about 15 minutes are left, cut zucchini into spaghetti-like strands using a 'spiralizer', julienne peeler, or mandoline slicer. Saute in a lightly-greased skillet for 2 to 3 minutes. Serve meatballs atop zucchetti, and devour!
