Main Ingredients


1 tablespoon olive oil

head cauliflower, cut into small florets

1 tablespoon minced garlic

1 cup milk

3 cups low sodium chicken broth

1/2 cup parmesan cheese

1 teaspoon salt (optional. i didn't use any salt)

sour cream

cream cheese with chives


1 tablespoon butter or olive oil (i personally love the taste of butter, lol)

1 package fresh spinach

1 tablespoon minced garlic

pinch of pepper and cayenne (optional)


1 tablespoon olive oil

1 lb . shrimp

minced garlic

cayenne, black pepper


1FOR CAULIFLOWER: In a large soup pot heat olive oil. Saute the cauliflower and garlic for a quick minute or two. Once the garlic smell fills the room go ahead and add milk and broth. (The first time I did this, I used only water and while it was still good, it required a great deal more of seasonings. The second time I used milk and broth...perfectionnnnnn!!) You will only need to simmer the cauliflower for 10-15 minutes until it is soft. To test this, you just use a fork and see if it is soft enough for you. Then simply mash the cauliflower like you would potatoes. Some people like to use a food processor, I personally love mine to have little chunks in it, so I use a fork and large wooden spoon. Add the sour cream, cream cheese, and Parmesan cheese to taste.

2FOR SPINACH: Melt butter or heat some olive oil in your nonstick skillet. Add garlic. Add the Spinach and saute. Season lightly with a black pepper and cayenne if you desire.

3FOR SHRIMP: Heat olive oil and garlic in your skillet before adding shrimp. It only takes a few minutes to cook shrimp...when it turns pink you will know it's done. Season with cayenne pepper and black pepper.

4For best taste, serve immediately.
