Tofu and marinade

450 - 460 gms extra-firm tofu cut into cubes

1 tbsp peanut butter

3 tbsp soy sauce

1 - 2 tbsp sriracha (optional)

2 tbsp plain rice vinegar

2 tsp toasted sesame oil

2 tsp freshly grated ginger

Pad Thai stir fry

2 around cups brown rice noodles to cook (or rice noodles)

2 tsp oil, divided (i used coconut oil)

1 1/2 - 2 red or yellow pepper, julienned

1/2 white onion, thinly sliced

2 - 3 carrots, julienned

1 thai chili, finely chopped

1/2 cup peanuts, chopped (or more for extra crunch)

1/2 cup cilantro

Spicy Pad Thai sauce:

3 tbsp soy sauce

3 tbsp fresh lime juice

1 tbsp sriracha (adjust)

3 tbsp maple syrup

2 1/2 - 3 small garlic cloves, minced


1For Tofu/protein, drain liquid and with paper towels, press down firmly on tofu with your hands to get rid of any excess liquid. Keep it for 5-10 mins before pressing liquid out, then cut into cubes.

2Prepare the marinade for the tofu in a bowl till then- peanut butter, soy sauce, sriracha, rice vinegar, toasted sesame oil and ginger.

3Heat a large pan over medium heat. Add the tofu cubes and cook until lightly browned on each side, about 5-7 minutes. Then add tofu in the marinade bowl till coated well and let it sit.

4Cook your noodles according to package instructions.

5For the Pad Thai, whisk the ingredients for the Pad Thai sauce and set aside.

6Heat a large wok over medium heat and add 1 teaspoon of oil. Add in the vegetables (red pepper, onion, carrots and chili) and cook until just tender, for about 2-3 minutes.

7Add the remaining teaspoon of oil to the pan and add the cooked and drained noodles and stir fry for a minute, stirring often.

8Add in the sauce and stir-fry until the sauce starts to thicken a little and then and stir together until combined well. Stir in the peanuts, cilantro and serve in 4 bowls.

9Add the marinated tofu crumbles to the pan you fried tofu in and stir fry for another 2-3 minutes until tofu is crispy and sauce is absorbed into the tofu. Serve on top of bowls and enjoy!

Additional Notes

This tastes delicious with tofu! You can use chicken or shrimp if you're still not happy with the vegan meal. If so, marinade your meat in advance and then cook it. Use tamari for gluten free soy sauce.
