Spicy Lamb Tacos W/ Slaw

In a large skillet over medium-high heat, sauce the lamb with garlic and oregano. Cook for 6-8 minutes until there is almost no pink. Combine the chile powders, beer, cider vinegar, and salt to taste and add tot he lamb. Stir and cook down until the liquid is gone. Place tortillas into Oven Safe Taco Tenders on a baking sheet and warm for 5 minutes in the oven. Make the slaw by combining the radis. . .

Slaw

3 cups thinly sliced cabbage

1 bunch of radishes sliced and halved

1/2 tsp cumin seeds

1/4 cup cilantro

3 tbsp lime juice

salt to taste

Lamb

1 lb ground lamb

3 cloves of garlic, minced

1 tbsp fresh oregano, chopped

1 tsp acne chile powder

1 tsp chipotle chile powder

1/4 cup beer (porters, see notes)

1 tsp cider vinegar

8 warm corn tortillas

Toppings

crumbled feta

sour cream

chopped cilantro

fresh jalapeño

lime wedges

Preparation

1In a large skillet over medium-high heat, sauce the lamb with garlic and oregano. Cook for 6-8 minutes until there is almost no pink. Combine the chile powders, beer, cider vinegar, and salt to taste and add tot he lamb. Stir and cook down until the liquid is gone.

2Place tortillas into Oven Safe Taco Tenders on a baking sheet and warm for 5 minutes in the oven.

3Make the slaw by combining the radishes, cabbage, cumin, cilantro, lime juice, and salt.

4Transfer the slaw, lamb, and toppings to serving bowls and have the family build their taco!

Additional Notes

Choose dark beer like Porters or Stouts to compliment the earthiness of lamb. If you are unsure, try using Guinness your first time. Which will also be great to drink during the meal too!
