Spicy Balsamic Onion Spread

We often get asked for ideas for using rich, thick Italian balsamic vinegar that will stretch beyond the salad. This dip really showcases the flavor gems of balsamic - a little acidity, a little sweet. Your guests will want the recipe!

Main Ingredients

1 tablespoon spice infused olive oil 

2 cup diced sweet onion

3 tablespoons balsamic vinegar (try to find a true barrel-aged balsamic, not the store-bought version that is really wine vinegar with car

1/2 cup sour cream

4 ounces softened cream cheese at room temperature

sea salt to taste


1Finely chop the onion.

2Add a tbl of oil to a saute' pan (cast iron is our favorite), when hot, but not smoking, add onion

3Saute’ onion over medium heat until translucent and very lightly browned; about 4 minutes.

4While onion is cooking, mix sour cream and cream cheese in a medium bowl.

5Remove onion from heat and add balsamic to the pan. Stir.

6Pour onion mixture into the bowl with the cream cheese. Fold until well combined. Season well with sea salt and ground pepper.

Additional Notes

This dip is most appreciated with a bit of spiciness. You can saute' the onion in a spice-infused olive oil. If you don't have one, you can add cayenne or finely chopped chili pepper to the pan and saute' with the onion. You could also stir cayenne or chili powder into the mixture at the end.
