Spicy Asian Spiral Pickles
A twist on traditional refrigerator pickles that everyone will love!

2 cups rice vinegar
1 tablespoon fresh grated ginger
1 teaspoon red chile flakes
1 teaspoon sea salt
1 whole dried red chile
3 garlic cloves
1 onion or shallot
3 medium sized cucumbers
1Place all of the ingredients in a large wide mouth jar except for the cucumbers.
2Place the lid on the jar and give it a good shake to mix the ingredients and dissolve the sugar.
3Spiralize your cucumbers using a thick spiral attachment. (if you do not have a spiralizer, slice the cucumbers with a sharp knife or mandolin)
4Pack all of the cucumbers in the jar so they are completely covered by the pickling mixture.
5Refrigerate for at least 2 hours before eating.
6These will last in the refrigerator for up to 1 week (if they last that long!)
