Main Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cardamom

1/4 teaspoon cinnamon

1/2 teaspoon allspice

1 teaspoon vanilla extract

1/2 cup butter

3/4 cup brown sugar

2 eggs, beaten

3 mashed overripe bananas


1Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

2In a large bowl, combine flour, baking soda, salt, cardamom, cinnamon, and allspice.

3In a separate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas and vanilla until well blended.

4Stir banana mixture into flour mixture, just enough to moisten. Pour batter into prepared loaf pan.

5Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes before removing, then finish cooling on a wire rack.

Freezes well.
