Southwestern Chicken Taco Salad

Main Ingredients

for the salad:

1 bag romaine lettuce (or lettuce blend)

1 cup shredded mexican cheese blend

1 1/2 packages of southwest seasoned chicken strips

1 can (2 1/4 oz) of sliced black olives, drained

1/2 small red onion, diced

4 plum tomatoes, quartered

3/4 cup frozen roasted corn, defrosted and drained

3/4 cup black beans, drained and rinsed

tortilla strips

for the dressing:

1/2 cup thick and chunky salsa

1/2 cup sour cream

2 teaspoons taco seasoning mix


1In a small bowl, beat dressing ingredients with wire whisk until well blended.

2In a large bowl, mix all salad ingredients except the tortilla strips. Add dressing and toss until coated.

3Sprinkle with tortilla strips.

Additional Notes

Feel free to substitute cheddar, colby or monterey jack cheese instead of the Mexican cheese blend. Also, try using halved cherry tomatoes instead of quartered plum tomatoes.
