Soft And Chewy Carrot Cake Cookies

1/2 c cashew butter
1/2 c turbinado sugar
1 tsp vanilla
1/3 c shredded carrot
1 1/2 tsp cinnamon
1/2 tsp ginger
1/8 tsp nutmeg
1/2 tsp baking soda
1 tsp baking powder
3/4 c gluten-free flour
1/4 c golden raisins
1/3 c chopped pecans
1/4 c powdered sugar
1 1/2 tsp full fat coconut milk
1Preheat oven to 325F.
2Beat together cashew butter and turbinado sugar. Add egg and vanilla and mix to combine. Add carrot, cinnamon, ginger and nutmeg, mix. Add flour, baking soda and baking powder, mix. Stir in raisins and pecans.
3Scoop 1 oz portions onto a greased baking sheet, bake for 9-11 minutes.
4Combine powdered sugar and coconut milk to form glaze. After cookies have cooled slightly, dip or drizzle glaze on top.
