Smoky White Bean & Caramelized Onion Quesadillas

Main Ingredients

1 medium yellow onion, sliced into thin ribbons

1 1/2 cups or 1 15 oz can cooked white beans

2 tbsp nutritional yeast

1 1/2 tbsp lemon juice

1 tbsp tahini

1/2 tsp chipotle red jalapeno powder, or use smoked paprika

1/4 - 1/2 tsp salt

1/4 tsp dried thyme, optional

4 small whole wheat tortillas

Preparation

1Heat a nonstick skillet over medium low heat. Add 1/4 cup of water and once it's hot and bubbling, add in the chopped onions and stir until ALL of the water has evaporated and the pan is completely dry. Then add another small splash of water (about 1/8th cup this time) and again allow the pan to dry out while stirring constantly.

2Continue this process for 30-45 minutes until the onions have gone from light golden blonde to dark golden brown. They will have reduced significantly in size and should be very brown all over. Set aside.

3In a medium bowl, add the remaining ingredients, except for tortillas. Mash everything together until combined, then spread the mixture on your tortillas.

4Add the carmelized onions on top of the mashed beans, then place the other tortillas on top and gently press together.

5Heat a nonstick pan over medium-high heat and cook the quesadillas one at a time for about 2 minutes on each side until they are golden and crispy.

6Serve with fresh guacamole or vegan sour cream.

Additional Notes

This recipe makes enough for 2 people but the portion will also work for a single serving if you prefer more filling in the quesadilla, as shown in the photos.
