Smoky Baked Beans

6 cups cooked or 4 15oz cans unsalted (organic) navy beans

1 1/2 cups tomato sauce

1 onion, diced

1 splash apple cider or white vinegar

1 tbsp dijon mustard

1 tbsp liquid smoke flavoring (colgin brand is great)

1 1/2 tbsp maple syrup

1 tsp paprika

pinch of salt and pepper


1Preheat oven to 325 degrees.

2Drain the beans and place in a deep oven safe dish or casserole.

3Saute onions in olive oil on low until transparent.

4Add the remaining ingredients (except the beans) and simmer for approx 5 minutes.

5Fold mixture into the beans, cover and bake for 30 minutes. Remove cover and bake 10 minutes longer.

Additional Notes

Pack along for a picnic or barbecue.
