Main Ingredients

1/2 sprouted grain english muffin, toasted

1/4 avocado, mashed

2 slices tomato

2 oz smoked salmon

1 egg

1 tbsp white vinegar


1Assemble first four ingredients in order.

2To poach an egg, bring a pot of water and vinegar to a boil. Crack the egg in a small bowl or ramekin. Once the water is boiling, turn heat to low. Create a swirling vortex in the middle of the pot and drop the egg in. Cook for 3-4 minutes (depending on how runny you like your egg), then retrieve with a slotted spoon and set on top.

3Season to your liking, and enjoy!
