Slow Cooker Mediterranean Chicken
An easy slow cooker Mediterranean chicken recipe—cooked in a soupy tomato broth made with tomatoes and artichoke hearts. Simple enough for any night of the week! Perfect on top of spaghetti squash, rice or your favorite noodles.

2 lbs chicken thighs, bone-in*
1 can diced tomatoes, low sodium
1 can artichoke hearts, low sodium
3 tbs apple cider vinegar
1 tbs garlic oil
2 tsp dried herbs, like basil or italian seasoning
salt and pepper to taste
fresh parsley for garnish (optional)
prepared spaghetti squash (see our recipe above)
1Take off the chicken skin, if any, and salt and pepper both sides.
2Add all of the remaining ingredients in the slow cooker and stir together. (You can add more salt and pepper at the end, too.) Then, add the chicken and push down until covered by tomato mixture.
3Set slow cooker for 6 hours on low, or 4 hours on high. Low setting is recommended. Add more salt and pepper to taste, and garnish with fresh parsley. Serve over spaghetti squash.
*Vegetarian option: use your favorite plant-pasted protein, like white beans, tofu or tempeh.
