Slow-cooked Peach Pulled Pork
Summer's produce darling combines with melt-in-your-mouth pork roast, all in the convenience of your slow-cooker. With just a few minutes of prep, your crockpot does all the work for you, leaving you time to sit back and chill out. Plus, no need to add to the heat by turning on the grill, stove, or oven.

2 pound pork sirloin roast
2 cups peaches, diced
2 cups red onion, sliced
1 cup pre - made bbq sauce, such as heinz
1 cup peach or apricot preserves
1 t garlic powder, smoked paprika, salt, & pepper
1Layer red onions at the bottom of your crockpot.
2Place pork on top of the onions.
3Combine spices and rub onto the pork.
4Top pork with bbq sauce, preserves, and diced peaches.
5Cook on low for 8-10 hours.
6Shred pork with fork in the crockpot.
7Serve with Pineapple Jicama Slaw.
You could easily swap the sirloin roast for pork loin, shoulder, or chops. If peaches are not in season, you could use frozen or canned peaches. Just be sure you get them without added sugar, which could make the pork too sweet.
