Skinny Cheeseburger Spaghetti Squash-crusted Pie

Main Ingredients

1 medium-sized spaghetti squash

1 lb extra lean ground beef

1/4 cup diced onion

1 clove garlic, minced

2 tsp worcestershire sauce

2 eggs 1/3 cup low-fat, plain greek yogurt

2 tbsp tomato paste

1 tbsp dijon mustard

2/3 cup reduced-fat, shredded cheddar cheese

2 oz dill pickle slices

Preparation

1Preheat oven to 400°F.

2Cut spaghetti squash in half lengthwise; remove seeds and stringy pulp. Place cut-side-up on a microwave-safe plate. Microwave until easily able to pull apart spaghetti-like strands from squash flesh with a fork, about 12 to 15 minutes (no water in dish needed). Once cooked, let cool before scraping squash flesh with a fork to remove all of the spaghetti-like strands. Press squash strands firmly into bottom and up sides of lightly-greased pie pan, creating an even layer.

3While squash is in the microwave, prepare pie filling. In a lightly-greased, medium-sized skillet, cook beef, onion, garlic, and Worcestershire sauce over medium heat, stirring occasionally, until beef is brown, about 8 to 10 minutes. Remove from heat, and let cool slightly.

4In a medium-sized bowl, whisk together eggs, Greek yogurt, tomato paste, and mustard. Stir in ground beef mixture. Pour pie filling over squash crust. Sprinkle meat filling with cheese, and then top with dill pickle slices.

5Bake until filling is set, about 25 to 30 minutes.
