Simply Good Pumpkin Soup

Tis the season to eat all things pumpkin this Fall! This recipe is super simple and absolutely delicious!

Main Ingredients

1 1/2 can of pumpkin puree

1/2 white onion, diced

2 tbsp minced garlic

1 cups milk, i use almond/coconut milk

2 cups vegetable broth

2 tbsp maple syrup

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp cinnamon

1/4 tsp nutmeg

1 tbsp olive oil

Preparation

1Add olive oil to a large saucepan over medium heat. Add garlic and onion and cook for 2-3 minutes or until slightly browned and translucent.

2Add remaining ingredients and bring to a simmer. Continue cooking over low heat for about 10 minutes and taste to adjust seasoning as needed.

3Serve it up with your choice of cheese, sour cream, greek yogurt, or croutons and ENJOY!
