Simply Caramel Sauce
It doesn't get any better (or easier) than this! This sauce is creamy, sweet, and purely delectable with no refined-sugar, so you'll feel better about dunking your favorite treat right into the pot. Try it over cakes, cookies, brownies, ice cream... The sky's the limit when it comes to this deliciously versatile caramel sauce!

1 can (or 2 cups) full-fat coconut milk
1 1/2 cup coconut sugar
pinch of salt
splash of vanilla
1In a medium saucepan over low heat, mix together the coconut milk and sugar well. Bring the mixture to a simmer.
2Once simmering at a low boil, let it sit untouched for 15 minutes, then turn off the heat. Stir in the salt and vanilla then remove the saucepan from heat and allow the mixture to cool for 20 minutes.
3Cover and place in the fridge for at least 2 hours as the sauce will thicken the longer it sits. Enjoy!
Cane sugar is a great alternative for the coconut sugar!
