Simple Tandoori Masala
Throw out the highly processed box junk! This simple fresh tandoori masala recipe will enhance the flavors of various dishes in your kitchen.

2 1/2 tablespoons coriander seeds
2 1/2 tablespoons cumin seeds
2 1/2 whole black peppercorns
1 tablespoon ground cardamom
2 1/2 teaspoons chili powder
2 1/2 dried chillis
2 1/2 cayenne powder
2 1/2 teaspoon dried fenugreek
2 1/2 teaspoon whole cloves
2 1/2 teaspoon ajwain seeds
2 - 3 cinnamon sticks, broken into pieces
1Toast spices over medium heat, stirring often, be careful to not let it burn, this should take about 2 minutes. Allow the spices to cool.
2Grind mixture using a spice mill until you achieve a smooth powder.
3Store in an airtight container and use forever!
Mix all the spices in a bag and store in the refrigerator, do not toast or proceed to the subsequent steps. Toast and grind the spices in appropriate amounts whenever you are ready to use for a fresher taste.
