Simple Summer Broth
Broth and Homemade Soups aren't just for the Winter! This Simple Summer Broth uses the BBQ to Roast the Chicken and the Slow-Cooker to simmer the bones down. No heating up your house in the summer!

1 chicken carcass - bones, skin and some meat
12 + cups water
1After roasting a chicken on the BBQ, remove most of the meat from the bones and place in a slow cooker with the skin.
2Fill the slow cooker or crockpot with water, leaving about 1/2 an inch from the top. The water should cover the bones.
3Set the slow cooker to a low setting for 24-48 hours.
4When the broth has cooled, strain the liquid into a glass jar, using a mesh to strainer to separate the broth from the bones, meat and skin. Do not skim off the fat!
5Refrigerate or freeze the broth. Use it as a base for soups, sauces or simply enjoy the nourishing broth on it's own!
