Simple Skillet Vegetables

2 tbsp ghee (or butter)
1 purple onion, diced
2 - 4 zucchinis, cut into circles
1 yellow pepper, chopped
2 tomatoes, chopped
1 tsp dried thyme
1 tsp dried oregano
sea salt & fresh pepper to taste
1Over medium-high heat, melt ghee in a large skillet.
2Add onions and zucchini, cook until soft, about 5 minutes.
3Add tomatoes and seasonings and cook for 1-2 minutes until warm.
Serve with grilled chicken breast, salmon, grass fed steak or chickpeas or navy beans.
