Simple Mango Slaw
This mango-studded slaw is a perfect cacophony of flavors and textures- cool, creamy, crunchy meets salty, sweet, and a hint of sour. The bright tanginess that mango lends to this slaw makes it a refreshing side dish, especially to a fatty hunk of brisket or spicy fish tacos.

2 bags cole slaw mix
1 ripe mango, chopped into chunks
1/3 cup plain coconut milk yogurt, greek yogurt, or avocado mayonnaise
2 teaspoons tajin or 1 1/2 teaspoons salt and 1/2 teaspoon chili powder
1 juice and zest of lime
1/4 cup chopped cilantro or basil
1To prepare the dressing, whisk the yogurt, seasoning salt, lime juice, and lime zest in a large mixing bowl. Toss in the mango chunks.
2Pour in the two bags of cole slaw mix and cilantro. Toss until the cabbage is coated in the dressing. Serve immediately or store in the refrigerator for up to 3 days.
