Simple Chicken Tacos

Out here in California, we eat tacos on a regular basis. This is a very simple chicken taco recipe that I make almost once a week.

Main Ingredients

1 lb boneless skinless chicken thighs

2 tbs olive oil

1/2 cup chicken stalk

taco seasoning

1 tbs chili powder

1 tsp paprika

1 tsp granulated garlic

1 tsp granulated onion

1 tsp oregano

1/2 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne (optional)

1/2 cup shredded jack cheese

corn tortillas


shredded lettuce

sliced tomatoes


green onion

your favorite salsa or hot sauce


1Add half of the taco seasoning to the chicken thighs. Add olive oil to a skillet and sear the thighs over medium-high until browned on both sides.Then add chicken stalk and remainder of seasoning, reduce heat and cover for about 20 min until fork tender.

2Heat up tortillas in a hot skillet (no oil) 5 - 10 seconds per side and place in a tortilla warmer. Slice fix'ns as desired.

3When chicken is tender enough, roughly shred using 2 forks.

4Assemble and Enjoy!!

Additional Notes

The list of fix'ns you can add to a taco is almost endless. Experiment with different produce, hot sauces, cheeses, and salsas. Have fun!!
