Shortbread Cookie Protein Bars

Mix all ingredients in a stand mixer or big bowl until a dough forms (you may need to add 1-2 tbsp nut milk if it seems to dry). Fold in chips or "mix-in" at end. Line an 8x8 baking pan with parchment paper and press into pan and let freeze for at least an hour. You may need to use a spatula to smooth the dough into the pan so it is all even. After an hour, preheat oven to 300 and remove pan from . . .

Main Ingredients

1 cup drippy nut butter of choice

1 tsp cinnamon

1/2 cup protein powder of choice (i like nuzest pea protein and you can get your own with code press15 for 15% off)

3 tbsp of collagen protein (i like further food and you can get your own with code start10 for 10% off)

3 tbsp sweetener (honey/agave/maple syrup etc. optional)

3 tbsp chocolate chips (or other mix in)

1 tbsp almond milk (only if too crumbly)

Preparation

1Mix all ingredients in a stand mixer or big bowl until a dough forms (you may need to add 1-2 tbsp nut milk if it seems to dry).

2Fold in chips or "mix-in" at end.

3Line an 8x8 baking pan with parchment paper and press into pan and let freeze for at least an hour. You may need to use a spatula to smooth the dough into the pan so it is all even.

4After an hour, preheat oven to 300 and remove pan from freezer. Take out the dough and cut into bars (I like to do 8 bars but you can do more or less if you like) and put on parchment paper lined baking sheet to bake at 300 for 15 minutes.

Additional Notes

Don't freeze these, they crumble. Best stored in fridge. ALSO make SURE to let cool fully after coming out of the oven or they will also crumble. Other than that they are so delicious and clean!
