Shockingly Quick And Way-too-easy Weekday Breakfast Scramble
This breakfast scramble is the perfect go-to healthy breakfast for busy mornings

1/4 cup grated cheese
1/5 pound sausage (optional)
handful of spinach (optional)
for garnish sour cream (optional)
1Grate cheese, if not done previously
2Begin heating pan or skillet over medium-high heat
3Brown sausage, if using
4Add spinach, if using
5Crack eggs directly into pan or skillet, use spatula to break the yolks and scramble the eggs together. If using sausage and/or spinach, keep eggs on other half of pan until cooked through
6Once eggs are cooked enough to be slightly solidified, begin scrambling all ingredients in pan together and add cheese, salt & pepper
7Remove from heat when cheese is melted
8Top with a spoonful of sour cream (if using) and serve
