Sheet Pan Lemon-garlic Shrimp

Line sheet pan with aluminium foil. In a bowl, add all ingredients except shrimp. Whisk to combine. Add shrimp and toss to coat. Cover and let marinate for 15-30 minutes, but no longer because you don’t want the acidic lemon juice to break down your shrimp. Preheat oven to 425 degrees. Toss shrimp one last time and arrange in a single layer on the sheet pan. Cook for 13-15 minutes.

Main Ingredients

4 - 5 cloves of minced garlic (to taste-use more, use less, no big woop)

juice of one whole lemon

3 t. extra virgin olive oil

1/3 rd c. white wine (white cooking wine works fine too)

2 - 3 tablespoons minced fresh rosemary

1 teaspoon lemon-pepper seasoning

1/4 teaspoon 1/4 teaspoon cayenne pepper (optional)

1 lb raw shrimp, peeled & deveined (tails on or off, your call)

Preparation

1Line sheet pan with aluminium foil.

2In a bowl, add all ingredients except shrimp. Whisk to combine. Add shrimp and toss to coat. Cover and let marinate for 15-30 minutes, but no longer because you don’t want the acidic lemon juice to break down your shrimp.

3Preheat oven to 425 degrees.

4Toss shrimp one last time and arrange in a single layer on the sheet pan. Cook for 13-15 minutes.

Additional Notes

If you want to turn this into a heartier, meat-free meal, par-boil a few ears of corn (cut into 3rds) and fingerling potatoes for 7-10 minutes and add to sheet pan before baking. Melt 1/4th cup of butter and pour over all ingredients (the potatoes are bound to soak up some of your marinade while cooking, so additional liquid will be necessary).
